Born in the sun-dappled fields of Belgium, Witbier (that’s “white beer” for those of us less fluent in Flemish) is the refreshing rebel of the beer world. Cloudy from a healthy dose of unmalted wheat and packed with citrus and spice, it’s the zesty antidote to the overly serious pint. First brewed in monasteries as far back as the 14th century, Witbier was nearly lost to history in the mid-1900s, but was dragged back into the limelight by a stubborn milkman who decided actually, yes, we do need beer that tastes like citrus sorcery and herbal wizardry.
We took this old-world classic and gave it a sun-drenched, exotic twist. Coriander and bitter orange peel do their usual zesty dance, but then things get a little wild—we threw in grains of paradise (yes, that’s a real thing, not a Game of Thrones ingredient), and finished it off with a fragrant splash of Lebanese orange blossom water. It’s like your taste buds just booked a one-way ticket to a rooftop garden party in Beirut. Floral, spicy, and just perfumed enough to make your IPA-loving mate raise an eyebrow, this is the beer you drink when you’re feeling fancy but still want to sit in the sun and pretend you’re cultured.
