Lemon Verbena Wit Bier – 5.2%

Our fascination with Witbier shows no signs of fading. Over the years we’ve taken this classic Belgian style down a few different paths, with previous incarnations featuring Earl Grey, Camomile and Orange Blossom Water. For this latest chapter, we’ve turned to the bright, uplifting combination of Lemon Verbena and Lime zest.
As ever, the foundations remain reassuringly traditional, with orange peel, coriander and grains of paradise providing the familiar soft spice and citrus character that make Witbier such a joy to drink. The addition of Lemon Verbena brings fragrant lemon notes and a gentle herbal lift, while the lime adds an extra burst of zesty freshness.
We have a bit of a soft spot for Wits. There’s something endlessly rewarding about how a seemingly simple beer can offer so much nuance and room for expression. So while some breweries collect hop varieties, we’ll happily keep tinkering away with Witbiers

MUSIC PAIRING

The Art of Reduction
Pairing Melt by Boxed In with Crop feels fitting. Like a well judged crop in print terms, the album is all about focus, stripping things back to reveal what really matters. Boxed In takes influences from krautrock, post-punk and electronic music and distils them into something lean, hypnotic and endlessly rewarding.
The title track, Melt, perfectly captures the album’s appeal. Built around a driving rhythm and an irresistible groove, it slowly unfolds rather than exploding into life, with layers of synths and Oli Bayston’s understated vocals creating something that feels both intimate and expansive. There’s a warmth and fluidity to the track that lives up to its name, blurring the lines between indie, dance and electronic music.
Throughout the album, repetitive rhythms and subtle textures build and evolve with patience, creating music that feels both precise and deeply human. Nothing is wasted; every element has its place, and the beauty lies in the details. It’s an album that reveals itself gradually, rewarding repeated listens rather than chasing instant impact, a reminder that sometimes less really is more.
